RAW Party Pesto Pasta

Here’s a step-by-step recipe for Raw Pesto and Raw Pasta … plus we’re combining it with other ingredients like Umeboshi Plum to make it an extra special Party Pesto Pasta. We had a busy schedule that night… a gallery opening, Lex Grey’s band (it was her birthday too), and ultimately we went to Hilary’s Birthday Party. Recipe for Raw Party Pesto Pasta: BASIC PESTO: • 2 Cups Organic Basil Leaves- (washed & stems removed) • 1/4 Cup Raw Organic Walnuts – (soaked for 2 hours) • 1/4 Cup Organic Extra Virgin Olive Oil (cold pressed) • 2 Cloves Organic Garlic (minced and marinated in olive oil) • 1 Organic Lemon (juiced) • 1/4 teaspoon Celtic Sea Salt ADD… TO MAKE IT A PARTY: • 3 Umeboshi Plums (pitted, — hopefully you can find this at your health food store) • 1/4 Cup Organic Kalamata Olives- (pitted and sliced) • 1 Pint Organic Cherry or Plum Tomatos (sliced in half) RAW PASTA: • 3-4 Organic Zucchini, (peeled and cut in 1/2) • Spirooli (vetetable spiral slicer) ******** To make the Raw Party Pesto: Blend Pesto ingredients together in a food processor with the S blade. Scrape down sides as needed. Add Umeboshi Plum and blend again. Spoon pesto into a large bowl and add the rest of the Party ingredients. To make the Raw Zucchini Pasta: place peeled and halved zucchini in the spirooli (vetetable spiral slicer). Make sure it is in the center, and spin until you reach the end. Cut to smaller pieces using a dedicated scissor. Put Raw Pasta in a large bowl and mix in the Party
